Making Greek Chicken Lemon Soup (Avgolemono)

STORYTIME!!! AVGO What?!
The first time I had Avgolemono was at a family-owned Greek Restaurant in Chicago that also sold their own olive oil.
It was the first snowy day in Chicago, the kind that makes you feel like you are living in a snowglobe and makes inside spaces oh-so-cozy. I asked our server what she'd recommend to warm the soul.
Avgolemono.
Avgo-WHAT?!
She laughed and told me to trust her so I did.
I was nervous, I've never ordered something I couldn't pronounce.
Minutes later, I was rewarded a bowl of warm, creamy, tangy, lemony deliciousness. It was unlike anything I've ever had before.
Yes, this is soup for the SOUL.
Our server laughed again and said, "I told you so."
I never learned how to properly pronoubce Avgolemono nor had the opportunity to beg for the recipe when I left Chicago.
This Serious Eats Recipe will have to do :)

Shopping List!
- 1 whole chicken (use the rest of poached chicken for something else)
- 2 quarts chicken broth
- 1 c orzo
- 5 large eggs
- 1/4 c fresh lemon juice
- Kosher salt
- Minced dill

💡 If I can figure out how to poach chicken via instant pot, I can cut cooking time down by more than half!
